Every Summer Menu has a few dishes that quietly become favourites. Some stay because people keep ordering them. Others because we keep finding ourselves making small changes until everything feels just right. This season, after months of tasting and refining, these are the three dishes Ben keeps coming back to.
Ben describes this as the dish that he likes the most from the Summer menu. Sweet potato forms the base, balanced with preserved lemon labneh, parmesan, fresh dill and mint. Olive oil, pistachio and sumac dukkah, rose petals and microgreens bring the final layer. Sweet, bright, herby and made to share.
Some dishes feel like summer before the first bite. This one brings together cucumber, corn, hearts of palm, pickled red onion, jalapeño, coriander and mint with a cashew based leche de tigre. Watermelon, melon, peach and avocado add sweetness, while pistachio and sumac dukkah finish everything with a little crunch. Light, vibrant and full of contrast.
This is the bowl Ben keeps reaching for. Stracciatella sits alongside rocket, spinach, radicchio, courgette noodles, quinoa and seasonal fruit, finished with hazelnut dukkah, rose petals and a berry vinaigrette. Colourful, cooling and built around the ingredients that make the most sense this time of year.
