Sweet first. Then a gentle spice. Made with berries, red chilli and a touch of acidity, Fermented Chili Jam brings contrast rather than intensity. It cuts through richer dishes and lifts sweeter vegetables, making it a natural match for Steak Chimichurri, Latin Lover and Boniato Cakes.
If one sauce quietly goes with almost everything, it is this one. Creamy, nutty and balanced with lemon and garlic, Tahini has become an everyday favourite because it lets the ingredients do the talking. It adds richness without feeling heavy and works across bowls, Market Plates and vegetables alike, including many of our vegetarian dishes.
Not every spicy sauce needs to be fiery. Chipotle Mayo combines olive oil mayonnaise with marinated chipotle for a smoky, rounded heat that complements rather than dominates. It was made with our Piri Piri Chicken in mind, but it also pairs beautifully with Smashed Potatoes and Steak Chimichurri when you're looking for something with a little more character.
